Carrot, Chickpea and Pomegranate Salad

Brighten up you day with our fresh and tasty Carrot, chickpea and pomegranate salad. It is high in vitamin C, antioxidants, potassium, fibre and many other vitamins and minerals, and is the perfect side salad for your summer BBQ, or simply top with some grilled chicken or crumbled feta for a delicious light summer meal!

Ingredients:

– 450g carrot, grated

– 1 tin chickpeas, drained

– 80g pomegranate seeds

– 25g walnuts, crushed

– 1 large handful fresh coriander, chopped

– 1 garlic clove crushed

– 1 tbsp olive oil

– 1 tbsp red wine vinegar

– 1 tbsp lemon juice

– ½ tsp honey

– ½ tsp cumin

– ½ tsp cayenne pepper

– Salt and pepper

Method

– In a bowl combine the grated carrot, chickpeas, pomegranate seeds, crushed walnuts and chopped coriander;

– Whisk together the remaining ingredients and drizzle over the salad;

– Toss well and chill in the fridge for an hour before serving.
