Middle Eastern Spinach & Herb Omelette Recipe…

The humble omelette has to be one of the most versatile, healthy meals you can whip up and enjoy in minutes. It works for breakfast, lunch or dinner and can be packed with as much or as little as you desire (or can find in the fridge).

This family recipe is absolutely stuffed with greens so whatever time of day you’re enjoying it, you know you’re doing your body some good!

Ingredients:
100g spinach, roughly chopped
50g grated cheese of your choice (we used Red Leicester here)
½ leek, finely chopped
2 spring onions, finely chopped
3 eggs, beaten
Large handful fresh mint, chopped
Large handful fresh parsley, chopped
1 tbsp oil / butter
Salt & pepper

Method:
– Gently sauté the spinach, spring onion and leek in a little oil then drain and allow to cool slightly.
– Heat the remaining oil in a non-stick frying pan over a medium heat and tilt the pan to spread the oil;
– Mix all ingredients in a bowl and then pour into the pan;
– Cook for 2-3 minutes and then flip to finish the other side for a couple of minutes (if your flipping skills aren’t up to much you can finish under the grill).
– Enjoy!
