Quick, Easy & Healthy Asian Mince Beef Stir-Fry Recipe

Mince Beef Stir-Fry Ingredients

500g 5% mince beef
200g green beans, trimmed and cut into quarters
50g spring onions, chopped
2 garlic cloves, crushed
150ml beef stock
½ tbsp olive oil
2 tbsp reduced salt soy sauce
1 tbsp corn flour
1 tbsp rice wine vinegar
1 tsp grated ginger
1 tbsp lime juice
½ tbsp sesame oil
10g shredded coriander
Chilli flakes
Salt & pepper

Method

– Heat the olive oil in a large frying pan / wok, over a medium-high heat. Add the mince beef and ginger and stir fry for a few minutes until starting to brown;
– Tip in the green beans and ginger and stir fry for 5-10 minutes until cooked through;
– In a jug combine the beef stock, honey, soy sauce, rice wine vinegar and corn flour then pour over the beef;
– Simmer for 10-15 minutes until the sauce has started to thicken;
– Remove from the heat, season with salt and pepper and mix in the lime juice and sesame oil;
– Serve the Mince Beef Stir Fry topped with the coriander and chilli flakes, to taste.
