We all know chicken breast is a great way to pack in some lean protein, but it’s hard to be inspired with it sometimes. This simple Middle Eastern Chicken and Chickpea Stew is a great way to liven up the humble white meat and is high in antioxidants, vitamins and fibre.
350g chicken breast, diced
1 white onion, diced
1 red bell pepper, diced
3 garlic clove, crushed
1 tin chickpeas, drained
1 tin chopped tomatoes
2 tbsp tomato puree
1 tbsp oil
Large handful fresh parsley, chopped
1 tsp cumin
1 tsp paprika
1 tsp cayenne pepper
1 tsp dried mint
Salt & pepper
Heat the oil in a large non-stick pan over a medium heat and fry the onion and peppers until softened;
Add the chicken, garlic and spices and stir-fry until the chicken has cooked through;
Add the chopped tomatoes, tomato puree, chickpeas, mint and salt and pepper. Stir well, bring to the boil then reduce heat and simmer for 10 minutes;
Top with the fresh parsley and serve with rice or cous-cous.
