Middle Eastern Chicken & Chickpea Stew Recipe…

We all know chicken breast is a great way to pack in some lean protein, but it’s hard to be inspired with it sometimes. This simple Middle Eastern Chicken and Chickpea Stew is a great way to liven up the humble white meat and is high in antioxidants, vitamins and fibre.
Ingredients:
  • 350g chicken breast, diced
  • 1 white onion, diced
  • 1 red bell pepper, diced
  • 3 garlic clove, crushed
  • 1 tin chickpeas, drained
  • 1 tin chopped tomatoes
  • 2 tbsp tomato puree
  • 1 tbsp oil
  • Large handful fresh parsley, chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp dried mint
  • Salt & pepper
Method
  • Heat the oil in a large non-stick pan over a medium heat and fry the onion and peppers until softened;
  • Add the chicken, garlic and spices and stir-fry until the chicken has cooked through;
  • Add the chopped tomatoes, tomato puree, chickpeas, mint and salt and pepper. Stir well, bring to the boil then reduce heat and simmer for 10 minutes;
  • Top with the fresh parsley and serve with rice or cous-cous.
