Leftover Christmas Turkey Salad

This turkey salad with blue cheese salad & cranberry sauce dressing is packed full of festive flavour and takes minutes to prepare; meaning you can get back to the sofa for another tough afternoon of lounging!
Turkey Salad ingredients:
150g cooked turkey
60g Blue cheese, crumbled
150g thinly sliced cucumber
1/2 medium red onion, thinly sliced
Bag of mixed leaf greens
Dressing ingredients:
1 tbsp olive oil
1 tbsp red wine vinegar
1 tbsp cranberry sauce
1 tsp Dijon mustard
1/2 tsp crushed garlic
Salt Pepper
Method:
– Whisk all the dressing ingredients together;
– Add all turkey salad ingredients to a large bowl, stir in the dressing and mix well;
– Serve!
Turkey Salad Serves 2.
