Baked Chicken and Mozzarella Recipe
Liven up your chicken dinner with our high-protein Baked Chicken and Mozzarella with spinach and tomatoes.
The baked tomatoes provide a healthy dose of lycopene, an antioxidant which has been shown to reduce the risk of cancer, improve heart health and enhance the nervous system’s functioning. While the wilted spinach is rich in vitamins, minerals and antioxidants. But most importantly, this meal takes minutes to prepare and tastes like something you’d pay good money for on a night out. Ingredients
300g skinless, boneless chicken thighs
1 ball low-fat mozzarella
150g baby plum tomatoes, chopped in half
150g spinach, rinsed
1 garlic glove, finely chopped
½ tbsp olive oil
3 tbsp Balsamic Vinegar
½ tsp dried basil
½ tsp dried oregano
½ tsp chilli flakes (optional)
Salt and pepper
Preparation
– Preheat the oven to 180C fan.
– Heat the oil in a pan and gently fry the garlic for a minute before adding the chicken and searing on each side for 3-4 minutes.
– Add the balsamic vinegar, herbs, chilli, salt and pepper to the pan and increase the heat, stir together for a minute before removing from the hob.
– Tip the chopped tomatoes into the bottom of a small baking tray (a loaf tin is ideal), and then top with the chicken and balsamic juices.
– Bake for 25 minutes, then remove from the oven and cover the chicken with the torn mozzarella and return to the oven for 5 minutes until the cheese is melted.
– While the mozzarella is melting, tip the rinsed spinach into the pan you fried the chicken in. Drizzle with a little more balsamic and add salt, then wilt over a medium heat.
– Plate the chicken, and tomatoes with the spinach, and pour the remaining juice from the baking tray to serve.
Serving
– Serves 2
– This is a nutritionally balanced meal in itself, but if you need more calories, you can add a small serving of rice.
