Broccoli, Beetroot & Feta Cheese Salad…

Up your salad game this summer with our delicious Broccoli, Beetroot and Feta Cheese Salad. It’s high in fibre, protein, iron, vitamin C and so much more. A bowl full of goodness that tastes even better than it looks! Enjoy on it’s on or on the side of some grilled chicken.
Ingredients:
  • 180g tenderstem broccoli
  • 100g reduced fat feta cheese, crumbled
  • 100g cooked beetroot, sliced
  • ½ can chickpeas
  • 10g pumpkin seeds
  • 1 tbsp chives, finely chopped
  • 1 tbsp balsamic vinegar
  • ½ tbsp cider vinegar
  • ½ tbsp lemon juice
  • ½ tsp mustard
  • Salt and pepper
Method:
  • Steam or boil the broccoli, drain and allow to cool;
  • Mix the broccoli, feta, beetroot, chickpeas and pumpkin seeds together;
  • In a jug combine the remaining ingredients to make the dressing;
  • Pour dressing over the salad and toss well.
