Broccoli, Beetroot & Feta Cheese Salad…
Up your salad game this summer with our delicious Broccoli, Beetroot and Feta Cheese Salad. It’s high in fibre, protein, iron, vitamin C and so much more. A bowl full of goodness that tastes even better than it looks! Enjoy on it’s on or on the side of some grilled chicken.
Ingredients:
- 180g tenderstem broccoli
- 100g reduced fat feta cheese, crumbled
- 100g cooked beetroot, sliced
- ½ can chickpeas
- 10g pumpkin seeds
- 1 tbsp chives, finely chopped
- 1 tbsp balsamic vinegar
- ½ tbsp cider vinegar
- ½ tbsp lemon juice
- ½ tsp mustard
- Salt and pepper
Method:
- Steam or boil the broccoli, drain and allow to cool;
- Mix the broccoli, feta, beetroot, chickpeas and pumpkin seeds together;
- In a jug combine the remaining ingredients to make the dressing;
- Pour dressing over the salad and toss well.
Serves 2. Per serving: 316kcal; 17g fat; 18g carbs; 21g protein.
