Up your salad game this summer with our delicious Broccoli, Beetroot and Feta Cheese Salad. It’s high in fibre, protein, iron, vitamin C and so much more. A bowl full of goodness that tastes even better than it looks! Enjoy on it’s on or on the side of some grilled chicken.
180g tenderstem broccoli
100g reduced fat feta cheese, crumbled
100g cooked beetroot, sliced
½ can chickpeas
10g pumpkin seeds
1 tbsp chives, finely chopped
1 tbsp balsamic vinegar
½ tbsp cider vinegar
½ tbsp lemon juice
½ tsp mustard
Salt and pepper
Steam or boil the broccoli, drain and allow to cool;
Mix the broccoli, feta, beetroot, chickpeas and pumpkin seeds together;
In a jug combine the remaining ingredients to make the dressing;
