Our Spiced Chicken Bake recipe is a super-simple, one-dish meal that takes less than 10 minutes to prepare but is packed full of flavour, vitamins and protein…

Ingredients:
400g chicken breast
2 red peppers, thinly sliced
1 Courgette, thinly sliced
1 onion, thinly sliced
1 jar passata
3 garlic cloves, thinly sliced
2tsp paprika
1 tsp cumin
1 tsp coriander
1 tsp parsley
1 chilli pepper, finely chopped / 1 tsp chilli flakes
Salt & pepper.

Method:
Preheat oven to 180’ (fan). Mix all ingredients (excluding chicken) in a baking tray. Cook for 30 minutes. Remove tray from oven and mix in chicken, making sure it is covered in sauce. Cook for a further 20 minutes or until chicken is cooked through. Sprinkle with fresh parsley to serve.

Serves 4. Each portion: 193 kcal, 16g carbs, 28g protein, 2g.

This recipe can be made vegan by switching the chicken for chickpeas!
