Ingredients (Serves 4)

400g chicken breast

2 red peppers, thinly sliced

1 courgette, thinly sliced

1 onion, thinly sliced

1 jar passata

3 garlic cloves, thinly sliced

2 tsp paprika

1 tsp cumin

1 tsp coriander

1 tsp parsley

1 chilli pepper, finely chopped (or 1 tsp chilli flakes)

Salt & pepper to taste

Method

Preheat your oven to 180°C (fan).

Combine all ingredients except the chicken in a large baking tray and mix well.

Bake for 30 minutes, allowing the veggies and spices to infuse the passata with rich, smoky flavour.

Add the chicken, making sure it’s fully coated in the sauce. Return to the oven for another 20 minutes, or until the chicken is cooked through and tender.

Finish & serve: Sprinkle with fresh parsley and enjoy hot — straight from the oven!
