Chickpea & roast pepper salad:
2 cans chickpeas, drained & rinsed;
1 jar roast / chargrilled peppers, drained and chopped into 2cm pieces;
1 red onion, finely diced;
Large handful chopped fresh parsley / 1 tbsp dried;
Juice 1 lemon / 2tbsp:
Salt & pepper to taste.
Mix all ingredients together;
Serves 4 as a main:
Each serving: 342kcal; 43g carbs; 10g fat; 14g protein.
Serves 6 as a side:
Each serving: 228kcal; 28g carbs; 7g fat; 9g protein.
