Chicken & Chorizo Traybake Recipe…

Who doesn’t love a one-dish recipe that can be prepped in 5 minutes? And this Chicken & Chorizo Traybake is high in protein and seriously loaded with flavour, along with a healthy dose of antioxidants from the red onion, lemon and tomatoes!

Ingredients:

500g chicken thighs (with skin & bone)
500g baby new potatoes
50g chorizo cut in 5mm rounds
1 red onion, cut in chunks
100g baby vine tomatoes
1 lemon – zest and then thickly slice
1 tsp chilli flakes
1 tbsp oregano
1 tbsp thyme
Salt & pepper

Method:

– Preheat the oven to 180C fan;
– Clean and boil the new potatoes for 5 minutes;
– In a large bowl mix all ingredients (apart from tomatoes), squeeze juice from lemon slices and add slices to mix;
– Transfer to a large baking tray and bake for 20 minutes;
– Remove tray and spoon juices over the chicken. Return to the oven for a further 20 minutes;
– Add the tomatoes to the top of the baking tray and cover with juices. Cook for a further 20 minutes;
– Serve your chicken & chorizo traybake with a fresh salad.
