Low Carb Salmon, Mushroom & Spinach Frittata

This super simple, Low Carb Salmon, Mushroom & Spinach Frittata Recipe can be prepped in 10 minutes and is high in protein, low in carb and packed with nutrients. It is a perfect lazy brunch idea that will keep you full for hours or enjoy it as a light lunch or dinner, served with a fresh garden salad.

Ingredients:

2 salmon fillets, skin removed and diced

100g spinach, roughly chopped

100g chestnut mushrooms, sliced

4 eggs

1 ball low fat mozzarellas grated

1 garlic clove, crushed

5g butter

Handful fresh basil, finely chopped / 1 tsp dried basil

Salt & pepper

Method:

– Preheat oven to 180C fan and line a 20cm baking tray;

– Heat butter over a medium heat and fry mushroom & garlic until softened;

– Mix all ingredients well in a large bowl then transfer to baking tray;

– Bake for 30 minutes.
