This spicy kofta wrap with cooling tzatziki is a deliciously simple, high protein dish that tastes even better when the sun is shining! Don’t worry if you don’t have all the spices at home, even just a couple of them will work well, but ideally you want something with a kick and some mint.

Kofta ingredients:
– 500g lean mince lamb
– 30g oats, blended until fine
– ½ red onion, grated
– 2 tsp cumin
– 2 tsp cayenne pepper
– 1 tsp ground coriander
– 1 tsp paprika
– 2 tsp dried mint
– Salt and pepper

Tzatziki ingredients:
– 200g 0% fat Greek yoghurt
– ½ red onion, finely diced
– 200g cucumber, finely diced
– 2 tbsp lemon juice
– 1 garlic clove, crushed
– Handful of fresh mint, chopped / 2 tsp dried mint
– Salt and pepper

Method:
– Mix all tzatziki ingredients in a bowl and leave to chill in the fridge so the flavours can mingle!
– Mix all kofta ingredients in a bowl and divide into 8 small or 4 large kebabs;
– Grill the kofta under a hot grill for 5 minutes then turn over to grill the other side for 5 – minutes (alternatively cook them on a BBQ!);
– Load the kofta into a wrap with the tzatziki and salad and try not to get too messy as you devour!
