Chicken with Orange ingredients
For the Chicken Thighs
6 skinless, boneless chicken thighs
2 tbsp olive oil
3 garlic cloves, minced
1 tbsp fresh rosemary, chopped
1 tsp paprika
1 tsp ground cinnamon
Salt and pepper, to taste
For the Cranberry Orange Glaze
1 cup fresh or frozen cranberries
120ml freshly squeezed orange juice (about 1 large orange)
1 tbsp lemon juice
1 tbsp honey
1/4 tsp ground cinnamon
For the garnish
Fresh rosemary sprigs
Pomegranate seeds
Instructions
Prepare the Chicken Thighs
Preheat the oven to 180°C fan.
In a small bowl, mix olive oil, garlic, rosemary, paprika, cinnamon, salt, and pepper.
Rub the mixture all over the chicken thighs and set aside to marinate for 15–20 minutes.
Make the Cranberry Orange Glaze
In a small saucepan, combine cranberries, orange juice, lemon juice, honey, and cinnamon.
Cook over medium heat for 8–10 minutes, stirring occasionally, until the cranberries burst and the sauce thickens slightly. Remove from heat.
Roast the Chicken
Arrange the chicken thighs on a lined baking sheet or in a roasting dish. Roast in the oven for 15 minutes.
Brush the cranberry orange glaze over the chicken and return to the oven. Roast for an additional 10–15 minutes until the chicken is cooked through.
Serve and Garnish
Transfer the chicken thighs to a serving platter. Garnish with fresh rosemary sprigs and pomegranate seeds for a festive touch.
Serve with roasted or boiled new potatoes, and a crisp green salad for a balanced Christmas meal.
