Air Fryer Chicken & Roast Veggie Bowl Ingredients
For the Chicken
2 large chicken breasts (approx. 400g), cut into chunks
1 tbsp olive oil
1 tsp smoked paprika
1+½ garlic clove, crushed
½ tsp dried oregano
Salt & pepper to taste
For the Roasted Veggies
1 medium sweet potato, peeled and diced
1 red pepper, chopped
1 courgette, sliced
1 small red onion, sliced
1 tbsp olive oil
Salt, pepper, and a pinch of smoked paprika or cumin
For the Greek Yogurt Sauce
150g 0% fat Greek yogurt
Juice of ½ a lemon
½ clove garlic, crushed
1 tbsp chopped fresh parsley or dill (optional)
Salt & pepper to taste
Healthy Air Fryer Chicken Recipe with Roast Veggies – Instructions
Marinade the chicken in the oil, paprika, oregano, garlic, salt and pepper. Ideally chill in the fridge for at least an hour, but it will still work well without long to marinade.
Roast the Veggies. Preheat your oven to 200°C (180°C fan). Toss the chopped sweet potato, courgette, red pepper, and onion in 1 tbsp olive oil, season with salt, pepper, and a pinch of smoked paprika or cumin. Spread on a baking tray and roast for 45 minutes, turning once halfway, until golden and tender.
Cook the Chicken. Preheat your air fryer to 200°C then add the chicken and air-fry for 10 minutes, turning halfway.
Alternatively, if you do not have an air fryer, heat a non-stick pan or grill pan over medium-high heat. Stir-fry the chicken for around 8 minutes, turning occasionally, until cooked through and lightly charred.
Make the Yogurt Sauce. In a small bowl, mix the 0% fat Greek yogurt with lemon juice, minced garlic, salt, pepper, and herbs if using. Taste and adjust seasoning.
Assemble Your Bowls. Divide the roasted veggies and chicken between two bowls. Drizzle with the yogurt sauce and garnish with extra herbs if desired.
